The Essence of Sweet Onions of the Cévennes

The cultivation of the heritage Cévennes sweet onions is perfectly suited to the physical characteristics of the southern slope of The Cévennes. The sandy, acidic soil with excellent drainage, derived from slate or granite rock, along with the dry, hot, and sunny climate, contribute to the distinctive terracing and create an ideal environment for these onions to thrive.

A Rich Culinary Heritage

The sweet onions of the Cévennes are meticulously cultivated, with the onion seed sown in nurseries in February and transplanted in May. After being carefully tended to, these onions are harvested by hand in August. The farmers' patience pays off as they are rewarded with beautiful pearly-white onions, which are a testament to the region's dedication to preserving their culinary heritage.

Flavourful Versatility and Health Benefits

Characterised by a melting texture and a sweet taste, the Cévennes Onion can be enjoyed raw or cooked, adding depth and flavour to various dishes. From rustic creations to fine recipes, these onions enhance the culinary experience with their unique profile. In addition to their exceptional taste, Cévennes sweet onions offer health benefits, as they are low in calories and rich in vitamin C. They also contain essential minerals and trace elements that contribute to immune and antioxidant properties.
